Day 7 - Pumpkin 

Celebrate today with a sweet treat and a walk outdoors.

Get the entire family involved in the kitchen for an afternoon of baking 

Make this day sweet while still getting in your serving of vegetables for the day to continue to nail this challenge!

 Have you ever considered using canned pumpkin to make chocolate muffins? Yes, you can add vegetables to your baking goods, and the kids will never know! 

  Pumpkin is a versatile and affordable vegetable that can be enjoyed year-round. Canned vegetables can and should be part of a healthy diet. 

Canned pumpkin is cholesterol free, very low sodium, and a great source of fiber and vitamin A. 

Ready to start baking? 

Chocolate Pumpkin Muffins

Ingredients

• 1 (18.5-ounce) box devil’s food cake mix

• 1 (15-ounce) can pumpkin OR 2 cups fresh pumpkin (cooked and mashed)

• 1 cup dark chocolate chips

Steps

1. Wash your hands with soap and water.

2. Mix the cake mix, pumpkin, and chocolate chips in a large bowl.

3. Spoon the batter into a greased muffin pan.

4. Bake 10–12 minutes at 350ºF.

5. Let cool and enjoy!

Walk:

After the baking session, make today even more special by taking advantage of your walking time to connect with friends, family, and loved ones 

While walking today’s mile, call a friend, walk to a friend’s house, or invite your best friend to join you on a walk.

Encourage someone who may not be active to enjoy a walk with you!
